If this were a bodyman 25 years in the eyes of collision repair work to restore old cars or airplanes?
Plane at restaurant time, I think, is a labor of love, in general, because more money than members of the club that bought the old brain plan to start. If you want restaurant car, why not a restaurant to yourself and then take a cruise night or show and just talking to local people. It will become a business itself faster than you think. That's what started 15 years ago, just a hobby that turned into a nice little company that I work when want.
